Coconut Brownies

The August/summer vacation is a carefree time for most children around the world. It is a time when family outings can pop up but the majority of time is spent at home. This recipe was constructed with children in mind and with a little guidance and of course supervision any child can prepare this very quick, easy, delicious and unique coconut brownies recipe.

Ingredients:

½ cup/125g butter margarine

¾ cup/165g brown sugar or granulated sugar

1/3 cup/75g unsweetened cocoa powder

¼ cup/55g chocolate chip

¾ cup/100g all-purpose flour

½ tsp. baking powder

¼ tsp. salt

¼ cup/ 55g grated coconut

2 eggs

1 tsp. vanilla extract

 

Method:

1. Preheat oven to 350ºF. Grease, flour or line an 8 inch baking dish with parchment paper or wax paper.

2. In a medium sauce pan, melt the butter. Add sugar, cocoa powder and chocolate chip. Stir well until chocolate chip has melted. Allow to cool a little.

3. Sift flour, baking powder, salt and add grated coconut.

4. Whisk eggs and vanilla essence lightly.

5. Combine flour and cocoa mixture and add eggs. Beat for 2 minutes.

6. Pour into a prepared baking dish and bake for 25-30 minutes at 350º F.

7. Remove from oven, spread chocolate glace icing, decorate and cut into sixteen 2-inch squared blocks.

8. Serve with whipped cream or cream or by itself.

 

It is important to remove the brownies from the oven and baking dish as soon as they have completed baking. They will not have that lovely moist texture if left too long in the oven.


Chocolate glace icing:

Ingredients:

 

1 cup icing sugar

2 tbsp. cocoa powder

2 tbsp. milk

½ teasp. vanilla essence

 

Method:

  • Place icing sugar into mixture add cocoa powder and mix will.

  • Mix together milk and vanilla essence.

  • Make a well in the middle of the sugar mixture and add milk stir slowly until completely incorporated

 

Decorations:

  • Toasted grated coconut      

  • Colour grated coconut

  • Sprinkles

  • Chocolate sprinkles

Variations:

  • Double  Chocolate  Coconut  Brownie

      ½ cup chocolate chip is used instead of ¼ cup

  • Walnut Chocolate Coconut Brownie

     ¼ cup walnuts chopped and add to flour mixture
