Delicious Moroccan Chicken Recipe
Ingredients
- 1 lb boneless chicken breast (seasoned)
- 1 lb boneless chicken thighs (seasoned)
- 1 tbsp paprika
- 1 tbsp dried ground ginger
- 1 tbsp roasted ground geera
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp cinnamon
- 1 tsp ground corriander
- 2 tbsp vegetable oil
- 1 large onion
- 2 pimento peppers
- 4 cloves of garlic
- 2 tbsp tomato paste in ½ cup water
- chopped fresh shadon beni for garnish
- 1 lime (juiced)

Directions
- Season chicken to taste as you normally would.
- Grill chicken in a hot pan and then chop into one inch cubes. Chicken does not need to cook through: it just needs colour on the outside. Save any juices with the chicken.
- Chop the onions, pimentos and garlic and sautee in the 2 tbsp of oil until soft.
- Add all the ground spices, salt and pepper and stir quickly so they don’t burn. Add ½ cup of water with the tomato paste.
- Add the diced chicken and stir to coat.
- Simmer for 10 minutes until the chicken is cooked through, stirring every minute. Add a small amount of water if necessary. Do not let the chicken dry out.
- Add chopped fresh shadon beni and a sprinkle of lime juice before you serve.
